Quail stewed with rice

Quail 2 pcs., 20 butter, fresh porcini mushrooms 20, 100 rice porridge, cheese 10, 75 sauce, greens.

Fried quails cut in half lengthwise, put in a saucepan in which they were roasting, pour with madeira sauce, add the sliced mushrooms, cover the bowl with a lid and cook at low boil for 5-7 minutes.

When submitting crumbly rice porridge, cooked in meat broth and grated cheese mix, put in a greased ring-shaped metal mold, then put the porridge from the mold onto a plate or dish. 

In the middle of the thus obtained ring lay quail with mushrooms and sauce and sprinkle with finely chopped greens.
